Yummy! So yummy! This dish has just enough flavor but is not overwhelming. It is quite the heavy meal, however! Especially when you add Divine Breadsticks to it!
1/2 cup bread crumbs
1/2 cup parmesan cheese
1 whole egg
2 boneless, skinless chicken breasts
Combine bread crumbs and cheese in a shallow bowl. Beat egg in another bowl. Dip each breast in egg, then bread crumb mixture.
Heat oven to 350 degrees.
1/8 cup EVOO
2 cups Prego
1/2 cup mozzarella cheese
Heat a non-stick skillet over medium high heat and add 1/8 cup extra virgin olive oil. Fry each breast until browned.
Place breasts in a glass cooking dish. Top with Prego. Top each breast with 1/4 cup mozzarella cheese. Bake for about 20 minutes. Serve over pasta and with those yummy breadsticks mentioned above!
I love chicken parmeasana! I agree with you on the heaviness thing, that's why it's almost necessary to have something light to pff set the weight of it all, although it is Aaron's fave :)

Oh, and thanks for the reference to that rhubarb site! I unfortunately saw your comment about it too late.. :S I will be trying out alot of those recipes though for sure. I love that rhubarb!
