Gluten free anyone?


Can I do it? Can I really go without bread, flour, wheat...? I sure hope so! For those of you who know me personally, you know that I have been struggling with some inexplainable pain in my left knee. I feel like I have tried a ton of different remedies, and doctors don't seem to know what is going on in there after x-rays, MRI's, etc. A little background...

My adorable little 7 year old niece, Madison, was diagnosed with Celiac disease about 1 year ago. She had been having severe pain in her knee that caused her to wake up in the middle of the night in tears. After some extensive research, tests, and more they realized that gluten was causing this pain. Since she has gone off gluten she has been pain free! (Well...until she grabs a piece of cake for a little freedom anyway!)

So, my brother gave me a call a few weeks ago with the idea that maybe, just maybe, this could also be the cause of my pain. I know it sounds crazy, but I PRAY that this is the answer! I will do anything to get rid of this pain I am feeling, even if it means no more delicious bread...tear...

I am trying to change my diet and see if it has any effect whatsoever on my pain, so pray for me, and I apologize in advance for the somewhat sketch recipes I will be posting. Due to my husbands picky nature with foods and my new-found dedication to be non-gluteness(!), it may take me a while to edit recipes. No chunks, no gluten, not-too-spicy, recipes anyone?!

I hope that Gluten free works for you. I know my daughter is over 3 yrs old and still doesn't sleep through the night. I find that on days we eat little to no bread she sleeps a little better. I am thinking of trying it myself. GOOD LUCK!!

Have you tried Quinoa? It is a seed but is classified as a grain. You cook it just like rice. It is 100% naturally gluten free. It can be used as a substitute to rice and pasta. I have used it a few times and love the slightly nutty flavor.

DaniSpies.com has some great quinoa recipes. Since she is a nutritionalist/dietician she also has some gluten free recipes.

Yikes - I half hope it is the answer, and half hope it isn't, so you don't have to endure life w/o bread! But then again... it would be worth it to run again, right?
My sister uses quinoa flour all the time in place of flour. She likes the higher protein content and fluffiness it retains in cookies, muffins, etc. She buys the whole grain in bulk from a health food store, then grinds it herself (otherwise the stuff can be pricey).

Chels! I hope you find the reason too, even if it means you'll be going gluten free. It's really not that bad, my old roomie went gluten free when she found she had celiac as well. She loves it! I have a couple recipes too, and some gf pie crust mix I could give you.

I hope that is the reason! It would be so hard to give up gluten, but if it works then I'm sure it would be worth it! I'll be interested to see what recipes you come up! Good luck!

Glad you are trying this. Maybe this is the reason for the sensory issues. I will be looking into that!! If it is the source of the problems I am glad that you may be around to help cook and to give me all of your recipes and tricks. There is a really nice health food store here in the great O! Hope all is going well!!
