Thai Peanut Chicken

Chalk it up for another DELICIOUS 30-minute meal! I seriously made this in about 3 minutes. What a wonderful thing a crock pot is...
Okay, so is it just me or do ALL crock pot recipes tell you to cook on HIGH for way too long of a time? I seriously never pay attention to the time on the recipes...I have just lived and learned I guess! This was such a different recipe for us, which is ALWAYS fun! For me to cook, anyway! It ended up really well. There are a few things that I would change here and there, and I have done that. I was afraid, for some reason, that this would be way too strange for our taste buds. Well, it ends up that is was very fitting. It was FLAVORFUL, not spicy, which is always good for us, we are wimps! It was also a quick, yummy, crock pot meal, which gives it a couple more stars on my list.
Thai Peanut Chicken

3 boneless, skinless, chicken breasts(I threw them in the crock pot frozen!)
3/4 cup medium or hot salsa(we used mild)
1/4 cup creamy peanut butter
2 Tbs. lime juice
1 Tbs. soy sauce (or this to be GF)
1 Tbs. brown sugar
½ tsp. minced garlic
1 tsp. grated fresh ginger root (or 1 tsp. ground ginger)
1/3 cup coconut milk
cilantro(for garnish, a necessity to us!)
chopped peanuts(for garnish)
Place chicken breasts in a slow cooker. In a small bowl, mix salsa, peanut butter, lim juice, soy sauce, brown sugar, garlic and ginger root. Pour mixture over chicken. Cook on low for 4-5 hours. remove chicken from cooker and shred into large pieces. Return to crock pot. Add coconut milk and turn to warm setting for 15-20 minutes prior to serving.
Serve over rice or noodles.
Top with cilantro and peanuts. My husband LOVED the cilantro, as did I. I would NEVER make this meal without it...it gives it just the right PUNCH at the end! Enjoy!

Oh yum! Thai peanut Chicken is a favorite! This recipe sounds perfect! I have yet to utilize my crockpot to make it . . . now I will have to!

My husband and I were really excited to try this because we LOVE Thai food, especially peanut sauce. I doubled the amount of peanut butter, and added a little more coconut milk too (because I was using a small can, and figured, why not?) :) We really enjoyed it! Our son, age 18 months, gobbled it up and asked for more. We felt adding cilantro was NOT optional. Totally makes the dish. It also seemed to be missing a little something, tho I'm not sure what. I googled a bunch of other Thai peanut sauce recipes and found they all had garlic and sugar, either white or brown. Many had a little salt too. So next time, we'll add those and see if we like the flavor that much more. Thanks again!

I agree with Amy in that there was something missing. I made portions as is, except I upped all amounts since I was using more chicken. IF I try it again, I will try the garlic and sugar. We also added some red pepper flakes after serving.

...I don't get the comments. There is garlic and brown sugar in this recipe. Mine is simmering in the crockpot right now, and tastes AMAZING. Great recipe.

Made this tonight and it was a hit with my husband and two toddlers! I was even out of both limes and soy sauce (doh!) but substituted salt and rice vinegar and still turned out well. I also added sliced yellow and red bell peppers to up the veggie content and add some variety. Thanks for sharing!

Hina A...Saucy as it more sauce? or as it a little more spice? If it is sauce, double away! This recipe does great to double or triple if needed. If you want to add some spice, we love Siracha! Mix some into the sauce or else use it as a garnish.

So after having this recipe pinned for so long, tonight I decided to try it! I was so intrigued to trying something I've never tried before with ingredients I would've never thought to put together! Nobody else in my house was interested once I told them what was in it. My husband said, "peanut butter, hot sauce AND lime juice AND coconut milk?" I told him it sounds weird, but the reviews were good so we are going to venture out and try something different. I'm SO glad I decided to give this a try! It was deeeelicious and will definitely be made again! Now, I don't know what it was supposed to taste like or how strong the peanut butter was going to be because I've never had anything like it...my chicken stayed nice and moist and the strongest flavor I could taste was the lime juice and then a subtle peanut-y hot sauce flavor toward the end of the bite! I didn't think it was missing anything and am happy with the way it turned out! I, as well used the cilantro because it is well loved in this household. I agree with it not being an option and being a MUST because it just adds that extra flavor! Thanks for a great recipe that will always be a keeper :)

I found this recipe a couple of years ago and finally decided I needed to come back and leave a comment! I LOVE this recipe. Over the years I have added a little more of this, substituted that, doubled or tripled the amount, ect... It turns out great every single time! It has been well received by a wide variety of eaters and leftovers never last more than a day.

Thanks for the great recipe, I've passed it along to many friends who have enjoyed it just as much!
